Jennifer,
There is a special fluid for all Chrysler products power steering available at most any part store. The brand I use is Sta Lube SL2641, it is called Power Steering Fluid Pre '89 Chrysler, Dodge, Plymouth. ATF is NOT recommended, not sure why.
On your second question, you should not experience rusting on steel fuel lines as they are plated, like brake lines, to resist corrosion. I believe the plating is tin or zinc or a combination of both. The only other suggestion, is to go with stainless steel lines.

For a 1962 300 Sport.
1. What type of power steering fluid is recommended? Just plain old
ATF?
2. What is a good finish for the hard fuel lines? I have the hard lines
going from the fuel pump, then to the pair of 4 barrels. How do I keep
them from getting a surface rust on them?
